For a juicier burger with crispy edges and great char, try these Smoked Burgers topped with gouda cheese and bacon. They may take a little longer to cook, but the wood-fired flavour makes it well worth the wait.

Ingredients

Burger

1 kg ground chuck
⅓ cup thinly diced red onions
¼ cup Worcestershire sauce
1 teaspoon ground black pepper
6 slices of gouda cheese
6 strips of bacon
tomatoes, lettuce and your favourite condiments
1-2 oak or hickory wood chunks

Preparation

  1. Preheat your smoker to 135°C.
  2. In a large bowl, combine ground chuck, onions, Worcestershire sauce and pepper, using your hands to mix.
  3. Form 6 equal-sized burger patties.
    HOT TIPWeighing the patties on a kitchen scale for consistent weight ensures the burgers will cook at the same rate.
  4. Place burgers in your smoker and toss wood chunks onto the hot coals. Cook burgers until the internal temperature reaches between 65°C and 75°C, depending on desired doneness, 45 minutes to an hour.
  5. Top each burger patty with a slice of gouda cheese for the last 10 minutes of cooking.
  6. Place burger on bottom brioche bun and top with bacon, tomato, lettuce and your choice of condiments.
