Whole Smoked Chicken Recipe

Prepped with a honey garlic rub, infused with smoky oak and apple wood flavour and finished with honey barbecue sauce, this whole smoked chicken is so delicious no one will believe it only took an hour and a half to make.

Ingredients

Chicken

1 whole chicken, 1.4 -2.2 kg ⅓ cup butter, melted
handful oak and apple wood chunks

Honey Garlic Barbecue Rub

¼ cup granulated honey
2 tablespoons garlic powder
1 tablespoon paprika
1 tablespoon chilli powder
2 teaspoons salt
1 teaspoon black pepper

Honey Barbecue Sauce

2 cups ketchup
1¼ cup honey
¾ cup brown sugar
¾ cup white vinegar
¼ cup Worcestershire sauce
2 teaspoons onion powder
2 teaspoons garlic powder

Preparation

  1. Preheat your smoker between 160°C – 170°C.
  2. Combine ingredients for the Honey Garlic Barbecue Rub into a bowl. Apply the rub on all sides of the whole chicken.
  3. Place the whole chicken in the smoker with 2 to 3 wood chunks spread through the hot coals. Close the lid and cook for 1 – 1.5 hours. Brush the whole chicken with melted butter a few times during your cook.
  4. In a saucepan, whisk all Honey Barbecue Sauce ingredients together. Bring the mixture to a simmer for 15 minutes.
  5. Brush the whole chicken with the Honey Barbecue Sauce during the last 15 minutes of your cook.
  6. Once the chicken has reached an internal temperature of 75°C, remove from the smoker and let rest for 10 minutes.
  7. Carve the smoked whole chicken into desired servings and serve with a side of Honey Barbecue Sauce.
