Tequila & Lime Chicken Fajitas Recipe

These chicken fajitas with tequila and lime are so juicy and bursting with Southwestern flavour! We suggest marinating them overnight in a sweet and smokey tequila and lime juice to make them intoxicatingly tasty. Served alongside warm tortillas and topped with Cotija cheese, we guarantee that they’ll disappear as quickly as they were made.

This dish was made by Jonathan Jones @jonathan.bbq, who made the dish on the Rider DLX 1200 Pellet Grill.

Ingredients

450 grams chicken breast, sliced
1 green capsicum, chopped
1 red capsicum, chopped
1 onion, chopped
2 limes, juiced
¼ cup avocado oil
¼ cup tequila
1-2 tablespoons fajita seasoning
3 flour tortillas
Crumbled feta or ricotta cheese, to taste

Preparation

  1. Combine the chicken, capsicums, onion, oil, tequila, lime juice and fajita seasoning in a large bowl. Leave to marinate overnight in the fridge.

  2. Fill the hopper with pellets and preheat the grill in SEAR mode to 450 F.

  3. Replace the circular centre grate with a griddle and grease it with avocado oil.

  4. Pour the marinated stir-fry mixture onto the griddle once it is hot.

  5. Sauté for 8 to 10 minutes, or until completely cooked through.

  6. Remove from the heat and set aside.

  7. Throw the tortillas on the griddle for 2 to 3 minutes, or until warm.

  8. Spoon the chicken mixture onto warmed tortillas, then sprinkle Cotija cheese on top. Enjoy!
