Smoked prawns are a great option for cooking tastier prawns that you can serve as an appetizer, side or main dish. Season these jumbo prawns first for a little spice. Then brush them with lemon-butter every 5-10 minutes for a tangy, buttery flavour. It only takes about 30 minutes, so take care not to overcook them.

Available year-round, fresh prawns should smell of the sea with no hint of ammonia. Since prawns cook quickly, when smoking them, stick with jumbo or colossal prawns.

Ingredients

Prawns

16 jumbo prawns, peeled and deveined
handful apple, cherry and/or alder wood chips
Seasoning Blend
2 tablespoons chilli powder
2 tablespoons salt
1 tablespoon garlic powder
2 teaspoons ground black pepper
¼ teaspoon ground bay leaf

Lemon-Butter

½ cup melted butter
2 teapoons lemon juice
1 teaspoon dried oregano
1 teaspoon dried parsley

Preparation

  1. Preheat smoker to 135°C.
  2. In a small bowl, combine chilli powder, salt, garlic powder, pepper and bay leaf. Sprinkle the seasoning blend equally on both sides of the shrimp.
  3. Combine the melted butter with the lemon juice, oregano and parsley. Set aside.
  4. Toss a handful of wood chips onto hot coals for smoking.
  5. Place the shrimps in your smoker. Cook for 25 to 30 minutes, brushing with the lemon-butter mixture every 5-10 minutes.
    HOT TIPShrimp will turn a medium-dark orange colour when fully cooked.
  6. Remove shrimps from the smoker and serve immediately.
