Mesquite-Smoked Sirloin Burgers Recipe

Separate yourself from the crowd with these smoky sirloin burgers.

Ingredients

Burgers

900 g beef sirloin
1 egg
2 tablespoons breadcrumbs
1 tablespoon Spanish paprika
½ tablespoon garlic powder
½ tablespoon onion powder
1 teaspoon salt
1 teaspoon black pepper
12 slices of bacon
6 slices of sharp cheddar cheese
6 burger buns
lettuce tomatoes, red onion and your favourite condiments
handful mesquite wood chunks

Preparation

  1. Preheat your smoker to 110°C.
  2. With a sharp chef’s knife, cut the beef sirloin into thin slabs. Next, slice the slabs into thin, spaghetti-like strips. Turn 90° and cut into 60mm pieces or use a meat grinder if you have one.
  3. Combine the ground beef sirloin with the egg, breadcrumbs, Spanish paprika, garlic powder, onion powder, salt and black pepper. Divide into 4 – 6 burger patties.
  4. Place the burger patties and bacon slices into your smoker. Add a few mesquite wood chunks onto hot coals. Cook for 30 minutes at 110°C.
  5. Preheat your grill to 260°C
  6. Remove the bacon from your smoker. Transfer the burgers onto your pre-heated grill and sear for 1 minute each side. Add slices of sharp cheddar cheese 30-seconds before removing the burgers, allowing the cheese to melt.
  7. Serve with smoked bacon, lettuce, tomatoes, red onions and your favourite condiments.
