Sticky, crunchy, spicy with a deliciously crispy-chewy texture...Candied Bacon really is all of that and more. This recipe combines salty and sweet for an irresistible snack that’s a guaranteed favourite. We basted bacon with brown sugar, maple syrup and hot sauce and then we smoked it and basted it some more.

Ingredients

1 pound bacon, regular cut
1½ cup light brown sugar
½ cup maple syrup
1 teaspoon cayenne hot sauce

Preparation

  1. Fill the hopper with wood pellets. Preheat your pellet grill to 300°F.
  2. In a medium-size bowl, combine brown sugar, syrup and hot sauce.
  3. Lay bacon strips on a baking sheet and brush both sides with the brown sugar mixture.
  4. Place bacon directly onto grill grate and close the lid.
  5. Cook for 5 minutes, then flip and brush with brown sugar mixture.
  6. Cook for another 5 minutes. Repeat the process until bacon is done, 4 to 6 times in total.
  7. Transfer bacon to a cooling rack and let cool completely before serving, about 15 minutes.
