Try James', The Tattooed Butcher’s take on the classic Baked Potato Recipe using Honey BBQ Pulled pork

Bake these potatoes and fill them with leftover pulled pork, (see our Smoked Pork Shoulder Recipe here), spring onion, red onion and cheese for a tasty twist on traditional baked potatoes.

Ingredients

Baked Potatoes

1 KG of Pulled Pork 8-10 Baked Potatoes
1 Chopped Spring Onion
1 Chopped Red Onion Tasty Grated Cheese to sprinkle

Sauce

1 Cup Culley’s Original BBQ Sauce 3 Tbsp Taylor Pass Honey (Beech Honey Dew) 2 Tbsp Brown Sugar 1 Tsp Sesame Oil 100g Butter 1 Tsp Ground Ginger

Preparation

  1. Preheat oven to 180°c on fan bake or set up your charcoal grill with lumps, briquettes or wood. If using a grill, set to roughly the same internal temp as you would with an oven, close the lid and leave to preheat for 15 minutes or until internal temp is reached
  2. Get your potatoes and poke small holes all the way around them before placing them directly in the oven / on the grill.
  3. Cook your baked potatoes for 40-45mins then remove from oven or grill and cut the top off them and scoop out the inside.
  4. Heat Pulled pork in a pot with your BBQ honey sauce on low (combine all ingredients together in a pot and heat on low for 5 mins).
  5. Once the pulled pork has reached a nice warm temp, remove from element and start filling your baked potatoes.
  6. Top the baked potatoes with the chopped spring onion, red onion & cheese.
  7. Place baked potatoes on a tray and cook till cheese is melted. HOT TIP – If using a grill, you can wrap your potatoes in aluminium foil leaving space for the cheese at the top to ensure it doesn’t stick to the foil. Alternatively use a foil cooking tray.
  8. Top with your favourite aioli or eat as is!
